Crab Cakes: Copsey's Crab Cakes

- 1/2 cup cracker crumbs
- 1 egg, beaten
- 1 lb. lump crabmeat, free of shell
- 1 tsp white pepper
- 1 Tbsp mayonnaise
- 1/2 tsp Worcestershire sauce
- 1 Tbsp cream
- 1/2 tsp salt
- 1 Tbsp prepared mustard
- 4 to 6 Tbsp butter
- 1 Tbsp minced parsley
Instructions
- Mix crumbs into crabmeat. Combine mayonnaise, cream, mustard, parsley, egg, pepper, Worcestershire sauce, and salt. Add to crabmeat and stir only enough to blend. Shape mixture between your hands into 6 hamburger-like patties.
- Heat the butter in a large skillet. Set crab cakes in hot butter and saute about 3 minutes on each side, until crisp and brown. If cooking crab cakes in batches, add more butter for the second batch.
