    Crab Cakes: Copsey's Crab Cakes

    List of Ingredients


    • 1/2 cup cracker crumbs
    • 1 egg, beaten
    • 1 lb. lump crabmeat, free of shell
    • 1 tsp white pepper
    • 1 Tbsp mayonnaise
    • 1/2 tsp Worcestershire sauce
    • 1 Tbsp cream
    • 1/2 tsp salt
    • 1 Tbsp prepared mustard
    • 4 to 6 Tbsp butter
    • 1 Tbsp minced parsley


    Instructions


    1. Mix crumbs into crabmeat. Combine mayonnaise, cream, mustard, parsley, egg, pepper, Worcestershire sauce, and salt. Add to crabmeat and stir only enough to blend. Shape mixture between your hands into 6 hamburger-like patties.

    2. Heat the butter in a large skillet. Set crab cakes in hot butter and saute about 3 minutes on each side, until crisp and brown. If cooking crab cakes in batches, add more butter for the second batch.

      Serves 6
