    Shrimp: Corky's Shrimp Saute

    List of Ingredients


    • 1-1/2 lbs. uncooked, peeled shrimp
    • 2 Tbsp butter
    • 1 Tbsp olive oil
    • 2 Tbsp minced garlic
    • 2 Tbsp minced shallots
    • 4 sun-dried tomatoes, chopped
    • 1/2 tsp each: dried basil, thyme and parsley
    • Pinch of oregano
    • Salt and pepper
    • 1/2 cup dry white wine


    Instructions


    1. In a heavy skillet, melt the butter and add the oil. Saute the raw shrimp just until it begins to turn pink. Add the garlic, shallots, tomatoes, mixed herbs, plus salt and pepper to taste.

    2. When shrimp is pink all over, remove pan from heat and dump the seafood into a warm dish. To the same pan, add the wine; boil one minute, then pour over the shrimp.

      Serve with hot cooked rice or pasta.

      Serves 4 to 6
