Salmon: Dawson's Poached Salmon

List of Ingredients
- 2 cups dry white wine
- 2 cups vegetable broth
- 1 Tbsp sherry vinegar (opt.)
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper
- 1 garlic clove, minced
- 2 Tbsp fresh lemon juice
- 1 sprig fresh parsley
- 4 (8-oz.) salmon fillets

- -- Dill-Mayonnaise Sauce --
- 1/2 cup mayonnaise
- 1 Tbsp fresh lemon juice
- 1 garlic clove, minced
- 1 Tbsp chopped fresh dillweed
- 1/8 tsp freshly ground black pepper
Instructions
- Combine first 8 ingredients in a skillet. Bring to a boil; add fillets. Cover and reduce heat; simmer 8 to 10 minutes or until fish flakes when tested with a fork.
- To make the Dill-Mayonnaise Sauce, stir together all ingredients.
- Serve immediately or chill for 8 hours before serving. Serve with Dill-Mayonnaise Sauce.
