    Salmon: Dawson's Poached Salmon

    List of Ingredients


    • 2 cups dry white wine
    • 2 cups vegetable broth
    • 1 Tbsp sherry vinegar (opt.)
    • 1/4 tsp salt
    • 1/4 tsp freshly ground pepper
    • 1 garlic clove, minced
    • 2 Tbsp fresh lemon juice
    • 1 sprig fresh parsley
    • 4 (8-oz.) salmon fillets
    • *
    • -- Dill-Mayonnaise Sauce --
    • 1/2 cup mayonnaise
    • 1 Tbsp fresh lemon juice
    • 1 garlic clove, minced
    • 1 Tbsp chopped fresh dillweed
    • 1/8 tsp freshly ground black pepper


    Instructions


    1. Combine first 8 ingredients in a skillet. Bring to a boil; add fillets. Cover and reduce heat; simmer 8 to 10 minutes or until fish flakes when tested with a fork.

    2. To make the Dill-Mayonnaise Sauce, stir together all ingredients.

    3. Serve immediately or chill for 8 hours before serving. Serve with Dill-Mayonnaise Sauce.

      Yield: 4 servings
