    Salmon: Dilled Salmon

    List of Ingredients


    • Mesquite chunks
    • 1 (3-lb.) salmon fillet
    • 1 Tbsp vegetable oil
    • 1 Tbsp seafood seasoning (i.e., Chef Paul Prudhomme's Seafood Magic)
    • 1 Tbsp chopped fresh dillweed
    • 2 limes, quartered
    • Garnish: dillweed sprigs


    Instructions


    1. Soak wood chunks in water to cover at least 30 minutes.

    2. Prepare charcoal fire in grill; let burn 15 to 20 minutes. Drain wood chunks and place on coals.

    3. Brush salmon fillet with oil; sprinkle with seafood seasoning and fresh dillweed.

    4. Grill, covered with grill lid, over medium heat (300 to 350 degrees) 25 minutes or until fish flakes with a fork.

      Squeeze lime quarters over fillets. Garnish, if desired.

      Makes 8 servings.
