    Halibut: Divine Halibut Burgers

    List of Ingredients


    • 1 Tbsp virgin olive oil
    • 2 cloves garlic, minced
    • 1/8 tsp kosher or sea salt
    • 1/2 tsp freshly ground black pepper
    • 2 tsp balsamic or wine vinegar
    • 1-1/2 lbs. halibut fillet
    • 1/2 cup sour cream
    • 1/2 cup mayonnaise
    • 2 to 4 Tbsp pickle relish (any kind)
    • 1 to 2 tsp capers, drained
    • 1 to 2 tsp green peppercorns, drained
    • 1 red onion, finely chopped
    • 4 onion hamburger buns, toasted


    Instructions


    1. Combine oil, garlic, salt, pepper and vinegar in a shallow bowl, stir gently and place halibut in this marinade for at least 30 minutes or all day (cover fish with waxed paper and chill in refrigerator while marinating).

    2. Combine sour cream, mayonnaise, pickle relish, capers, green peppercorns and onion, and stir well. If made ahead, cover sauce and refrigerate.

    3. Start coals. When coals are medium hot, grill fish, allowing 8 to 10 minutes per side, per inch of thickness. Place fish on a piece of foil, cover tightly with foil and let sit for 10 minutes.

      Slather toasted buns with sauce and add portions of fish.

      Serves 4
