    Bass: Fancy Fried Bass

    List of Ingredients


    • 1-1/2 lbs. small mouth bass fillets
    • 1/4 tsp salt
    • 1/8 tsp pepper
    • 1/2 cup flour
    • Butter
    • 1 cup (or more) sliced fresh mushrooms
    • 1/4 cup sliced green onions
    • 2 Tbsp dry white wine
    • 1 Tbsp lemon juice


    Instructions


    1. Place the flour on a plate. Sprinkle fillets with salt and pepper, then dredge lightly in flour.

    2. Melt about 2 tablespoons of butter over medium heat. Fry the fillets until golden brown on each side and remove to a plate, keeping them warm.

    3. If necessary, add more butter to the skillet and add mushrooms and green onions. Cook for about 3 minutes, then stir in the wine and lemon juice.

      Pour mixture over the fish and serve.
