Oysters: Fried Bacon-Wrapped Oysters

- 1 cup all-purpose flour
- 1 tsp salt
- 1 tsp pepper
- 2 pints fresh oysters (about 46), rinsed and drained
- 23 bacon slices, cut in half
- Peanut oil
Instructions
- Combine first 3 ingredients in a shallow dish. Dredge oysters in flour mixture. Wrap each oyster with a bacon piece, and secure with a wooden pick.
- Pour peanut oil to a depth of 1 inch in a deep cast-iron skillet or Dutch oven; heat to 350 degrees (F).
- Fry oysters, in batches, 2-1/2 to 3 minutes or until bacon is cooked. Drain on paper towels. Serve immediately.
Makes 6 to 8 main-dish servings,
or 23 appetizer servings.
