    Halibut: Grilled Halibut with Citrus Salsa

    List of Ingredients


    • Four 6-ounce halibut fillets
    • 2 tsp kosher salt
    • 1/4 tsp black pepper
    • .
    • -- Citrus Butter --
    • 1/4 cup orange juice concentrate (thawed)
    • 1-1/2 Tbsp lime zest
    • 2 tsp lemon zest
    • 1/16 tsp nutmeg
    • 1/2 tsp minced shallots
    • 1 cup softened butter
    • .
    • -- Citrus Salsa --
    • 1/2 cup grapefruit sections
    • 1/2 cup orange sections
    • 2 Tbsp diced red onion
    • 1 Tbsp chopped cilantro
    • 1/16 tsp sugar
    • .
    • 4 Tbsp butter


    Instructions


    1. Season halibut with kosher salt and pepper.

    2. To make citrus butter: Mix thawed orange juice concentrate, lime and lemon zest, nutmeg and shallots. Fold into 1 cup softened butter.

    3. To make salsa: Mix grapefruit, orange, red onion, cilantro and sugar. Refrigerate as long as possible, up to 2 days before serving.

    4. Rub 1 tablespoon butter on each seasoned halibut fillet. The butter will help to keep the fish from sticking to the grill. Grill over high heat 2 to 3 minutes per side. Just before fillets are done, spread 1 to 2 tablespoon citrus butter on the halibut and let it melt into the fillet.

      Serve with citrus salsa.
