Halibut: Grilled Halibut with Citrus Salsa

- Four 6-ounce halibut fillets
- 2 tsp kosher salt
- 1/4 tsp black pepper

- 1/4 cup orange juice concentrate (thawed)
- 1-1/2 Tbsp lime zest
- 2 tsp lemon zest
- 1/16 tsp nutmeg
- 1/2 tsp minced shallots
- 1 cup softened butter

- -- Citrus Salsa --
- 1/2 cup grapefruit sections
- 1/2 cup orange sections
- 2 Tbsp diced red onion
- 1 Tbsp chopped cilantro
- 1/16 tsp sugar
- .
- 4 Tbsp butter
Instructions
- Season halibut with kosher salt and pepper.
- To make citrus butter: Mix thawed orange juice concentrate, lime and lemon zest, nutmeg and shallots. Fold into 1 cup softened butter.
- To make salsa: Mix grapefruit, orange, red onion, cilantro and sugar. Refrigerate as long as possible, up to 2 days before serving.
- Rub 1 tablespoon butter on each seasoned halibut fillet. The butter will help to keep the fish from sticking to the grill. Grill over high heat 2 to 3 minutes per side. Just before fillets are done, spread 1 to 2 tablespoon citrus butter on the halibut and let it melt into the fillet.
Serve with citrus salsa.
