Salmon: Grilled Salmon with Cilantro Butter

- 6 Tbsp butter, at room temperature
- 2 Tbsp chopped fresh cilantro
- 2 Tbsp finely chopped tomato
- 2 tsp minced garlic
- 1/4 tsp pepper
- 1/8 tsp salt
- 4 salmon fillets, about 6 oz. each
Instructions
- In small bowl, combine butter, cilantro, tomato, garlic, pepper and salt. Mix well.
- Melt 2 tablespoons of the butter mixture and brush over both sides of each salmon fillet. Next, refrigerate remaining butter mixture.
- Grill salmon over medium heat for 4 to 5 minutes per side, or until fish flakes easily with a fork. Serve immediately, topping each fillet with equal amounts of remaining cilantro butter.
Serve with your choice salsa and corn on the cob.
Makes 4 servings.
