    Salmon: Grilled Salmon with Cilantro Butter

    List of Ingredients


    • 6 Tbsp butter, at room temperature
    • 2 Tbsp chopped fresh cilantro
    • 2 Tbsp finely chopped tomato
    • 2 tsp minced garlic
    • 1/4 tsp pepper
    • 1/8 tsp salt
    • 4 salmon fillets, about 6 oz. each


    Instructions


    1. In small bowl, combine butter, cilantro, tomato, garlic, pepper and salt. Mix well.

    2. Melt 2 tablespoons of the butter mixture and brush over both sides of each salmon fillet. Next, refrigerate remaining butter mixture.

    3. Grill salmon over medium heat for 4 to 5 minutes per side, or until fish flakes easily with a fork. Serve immediately, topping each fillet with equal amounts of remaining cilantro butter.

      Serve with your choice salsa and corn on the cob.

      Makes 4 servings.
