Salmon: Grilled Salmon with Sour Cream-Dill Sauce

"It makes sense that salmon is such a popular fish. It's readily available, cooks quickly, goes well with all kinds of herbs and spices, and can be made on an outdoor grill or on top of the stove. The dish is made complete with a creamy sauce and a little dill. Pair salmon with some steamed asparagus or snap peas garnished with chopped scallions."

Dill Sauce:

â—¦ â…“ cup mayonnaise
â—¦ 1 tablespoon minced shallot
â—¦ ½ teaspoon finely grated lemon zest
â—¦ Juice of ½ lemon
â—¦ 2 teaspoons chopped fresh dill
â—¦ ¼ teaspoon sugar
â—¦ ¼ teaspoon garlic powder
â—¦ 1 teaspoon kosher salt
â—¦ ½ teaspoon freshly ground black pepper
Salmon:
â—¦ Vegetable oil spray
â—¦ 2 tablespoons unsalted butter, at room temperature
â—¦ 4 (6-ounce) salmon fillets
â—¦ 1 teaspoon lemon pepper seasoning
â—¦ 1 teaspoon kosher salt
â—¦ Fresh dill
â—¦ Lemon slices
Recipe
To make the sauce: Whisk together the sour cream, mayonnaise, shallot, lemon zest, lemon juice, dill, sugar, garlic powder, salt, and pepper in a small bowl. Set aside.
To grill the salmon: Preheat a grill pan over high heat for 2 to 3 minutes. Spray the grill pan with the vegetable oil spray. Spread the butter on the belly side of each salmon fillet and season both sides with the lemon pepper seasoning and salt. Grill the salmon for 4 to 5 minutes on each side, turning them just once, until no longer pink inside.
Divide the salmon among four plates. Top each fillet with some dill sauce. Garnish with fresh dill sprigs and lemon slices before serving.
