Halibut: Breadcrumb-Crusted Halibut with Thyme

- 4 halibut steak or fillets, each 1/2- to 3/4-inch thick (about 1-1/3 to 1-1/2 pounds)
- 1/2 cup milk
- 1 cup unseasoned breadcrumbs
- 2 tsp fine sea salt
- 2 tsp freshly ground pepper
- 1 Tbsp minced fresh thyme leaves
- 2 tsp butter (plus more to butter baking dish)
Instructions
- Preheat the oven to 400° F. Pour the milk into a shallow baking dish. Mix together the breadcrumbs, salt, pepper and thyme in a small bowl, then spread the mixture out on a plate or a sheet of aluminum foil.
- Lightly butter a shallow baking dish large enough to hold the fish in a single, uncrowded layer.
- Dip each piece of fish in the milk, then into the breadcrumb mixture, coating both sides. Place the fish in the prepared baking dish, and dot with the remaining butter. Bake until the flesh flakes easily with a fork, about 10 to 15 minutes, depending on the thickness of the fish.
