Halibut: Happy Halibut with a Side o' Rings

List of Ingredients
- 1-1/2 cups flour
- 1-1/2 tsp salt
- 1/4 tsp cayenne (or to taste)
- 1 bottle Steam Whistle Pilsner
- 1 medium Spanish onion
- 1 lb. halibut fillets
- 1 lemon, cut into wedges
- Tartar sauce (homemade is best)
Instructions
- Preheat deep fryer to 375º F. Preheat oven to 250º F. Mix all dry ingredients well. Whisk in 1 bottle Steam Whistle until smooth. Let stand 15 to 20 minutes.
- Slice onion into 1/4-inch slices. Separate into rings. Dip rings into beer batter and deep-fry for approximately 1 to 2 minutes, turning once. Transfer to paper towel-lined baking sheet. Season to taste and keep warm in oven.
- Lightly flour halibut. Dip in beer batter and deep-fry 6 to 8 minutes, turning once.
Serve with lemon wedges and tartar sauce.
