    Cod: Lemon-Thyme Cod

    List of Ingredients


    • 2 large lemons
    • 2 Tbsp all-purpose flour
    • 2 tsp fresh thyme, chopped (or 1/2 tsp dried thyme leaves)
    • 1 cod fillet (about 1-1/4 lbs.), cut into 4 pieces
    • 2 Tbsp butter (1/4 stick)


    Instructions


    1. Grate lemon peel from 1 lemon; cut remaining lemon into wedges.

    2. On waxed paper, combine flour, thyme, grated lemon peel, 1/2 teaspoon salt, and 1/4 teaspoon black pepper; dip each piece of cod into flour mixture to coat.

    3. In nonstick 12-inch skillet, heat butter over medium-high heat. Add cod and cook 10 minutes, turning once, until fish flakes easily when tested with a fork.

      Serve cod with lemon wedges.

      Makes 4 servings.
