    Mackerel: Lime-Broiled Mackerel with Herbs

    List of Ingredients


    • 3 Tbsp olive oil
    • Zest and juice of 1 lime
    • 3 Tbsp chopped fresh herbs, such as parsley, thyme, rosemary, tarragon, chives and/or chervil
    • Salt and freshly ground black pepper
    • 4 mackerel fillets, skin on, 4 to 6 ounces each


    Instructions


    1. Mix together the oil, lime zest and juice, herbs, salt and pepper; toss with the fillets. Let sit for 10 minutes, and no longer.

    2. Preheat the broiler.

    3. Broil the mackerel skin side down, about 4 inches from the heat source for about 5 minutes. (Use a thin-bladed knife to check the interior of the fillets; they will be opaque and tender when done.) Brush the fillets once or twice with the marinade while cooking.

      Serves 4

      Alternate fish for this recipe: fillets of bluefish, mahi-mahi or pompano.
