Lobster: Lobster a'Lamericaine

- 2 (1-lb.) lobster tails
- 2 ounces butter
- 1 ounce chopped shallots
- 1 tsp chopped garlic
- 4 ounces brandy
- 8 ounces white wine
- 16 ounces fish stock
- 8 ounces tomato puree
- 8 ounces heavy cream (optional)
- Cayenne pepper
- Salt and pepper to taste
Instructions
- Cut lobster for sauteing. Saute lobster in butter for 30 seconds.
- Add shallots and garlic to the pan and saute for 30 seconds. Add the brandy, white wine, fish stock, tomato puree, and cayenne; simmer for 5 minutes.
- Remove the lobster from the sauce. Add cream and bring to a boil; reduce by half. Strain the sauce and add salt and pepper to taste.
Pour sauce over the lobster meat and serve.
Makes 4 servings.
