    Lobster: Lobster a'Lamericaine

    List of Ingredients


    • 2 (1-lb.) lobster tails
    • 2 ounces butter
    • 1 ounce chopped shallots
    • 1 tsp chopped garlic
    • 4 ounces brandy
    • 8 ounces white wine
    • 16 ounces fish stock
    • 8 ounces tomato puree
    • 8 ounces heavy cream (optional)
    • Cayenne pepper
    • Salt and pepper to taste


    Instructions


    1. Cut lobster for sauteing. Saute lobster in butter for 30 seconds.

    2. Add shallots and garlic to the pan and saute for 30 seconds. Add the brandy, white wine, fish stock, tomato puree, and cayenne; simmer for 5 minutes.

    3. Remove the lobster from the sauce. Add cream and bring to a boil; reduce by half. Strain the sauce and add salt and pepper to taste.

      Pour sauce over the lobster meat and serve.

      Makes 4 servings.
