Mahi Mahi: Mahi Mahi Kebabs with Tropical Salsa

- 2 cups diced mango
- 1 cup diced pineapple
- 1 red bell pepper, chopped
- 1/2 to 1 jalapeno, seeded and minced
- 1/2 cup chopped red onion
- 2 Tbsp chopped fresh cilantro
- 3 Tbsp fresh lime juice
- *
- 1/4 cup soy sauce
- 2 Tbsp honey
- 1 tsp grated fresh ginger
- 1/4 tsp freshly ground pepper
- 2 lbs. mahi mahi steaks, cut into 1-1/2-inch cubes
Instructions
- Stir together first 7 ingredients in a large bowl to make the salsa; cover and chill.
- Stir together the soy sauce, honey, ginger and pepper in a shallow dish. Add mahi mahi; cover and chill for 30 minutes.
- Thread fish onto 8 (12-inch) skewers. Grill, covered with lid, over medium-high heat (350 to 400 degrees) 5 minutes on each side or until done. Serve with salsa mixture.
Makes 4 servings.
