Mahi Mahi: Pan-Roasted Mahi Mahi

List of Ingredients
- 1/4 cup all-purpose flour
- 4 (7-ounce) pieces Mahi Mahi fillet (1-inch thick)
- Salt and freshly ground black pepper
- 3 Tbsp unsalted butter
- 2 Tbsp fresh lime juice
- Optional garnish: 1 teaspoon chopped fresh flat-leaf parsley
Instructions
- Put a rack in middle of oven and preheat oven to 350° F.
- Put flour on a plate. Season fillets on both sides with salt and pepper. Lightly dredge in flour and shake off any excess. Melt 2 tablespoons butter in a 12-inch ovenproof skillet over moderately high heat. Add fillets and cook just until very pale golden on the first side, 2 to 3 minutes. Turn fillets over, transfer skillet to oven, and roast until butter is golden brown and fillets are just cooked through, 6 to 8 minutes.
- Transfer fillets to 4 plates and cover loosely with foil to keep warm. Immediately add lime juice and remaining 1 tablespoon butter to hot skillet and deglaze by boiling, stirring and scraping up any brown bits. Season sauce with salt and pepper. Spoon sauce over fillets and sprinkle with parsley, if desired.
