Shrimp: Marinated Shrimp

List of Ingredients
- 2 pounds unpeeled, large fresh shrimp
- 6 cups water
- 2 teaspoons salt
- ½ cup sugar
- 1½ cups white vinegar
- 1 cup vegetable oil
- ¼ cup capers, undrained
- 1 teaspoon salt
- 1½ teaspoons celery salt
- 1 medium-size red onion, sliced and separated into rings
Instructions
- Peel shrimp, and devein, if desired.
- Bring water and 2 teaspoons salt to a boil; add shrimp, and cook 2 minutes or just until shrimp turn pink. Drain; rinse with cold water. Chill.
- Whisk together sugar and next five ingredients in a large shallow dish; add shrimp alternately with onion. Cover and chill 1 hour to 6 hours, turning often. Drain and discard marinade before serving.
Makes 10 appetizer servings
