Misc: Baked Fish with Orange-Chili Marinade

List of Ingredients
- 1/2 cup fresh orange juice
- 1/2 cup cilantro leaves, coarsely chopped
- 1 Tbsp olive oil
- 2 medium cloves garlic, peeled and minced
- 1 chipotle chili in adobo sauce, coarsely chopped
- 1-1/3 lbs. fish fillets
- 1/8 tsp salt
- Freshly ground black pepper to taste
Instructions
- Combine the orange juice, cilantro, olive oil, garlic and chipotle chili. Place the fish in a glass dish and cover with the marinade. Refrigerate 1 hour.
- Remove the fish from the marinade and place on a rack set into a baking pan or a broiling pan. Sprinkle the fish with salt and pepper.
- Bake in a preheated 450-degree (F) oven 12 minutes per inch of thickness, or until the fish tests done. (The internal temperature should be 140 degrees on an instant-read thermometer.)
Makes 4 servings.
