    Misc: Baked Fish with Orange-Chili Marinade

    "The El Paso Chili Company's Texas Border Cookbook"


    List of Ingredients


    • 1/2 cup fresh orange juice
    • 1/2 cup cilantro leaves, coarsely chopped
    • 1 Tbsp olive oil
    • 2 medium cloves garlic, peeled and minced
    • 1 chipotle chili in adobo sauce, coarsely chopped
    • 1-1/3 lbs. fish fillets
    • 1/8 tsp salt
    • Freshly ground black pepper to taste


    Instructions


    1. Combine the orange juice, cilantro, olive oil, garlic and chipotle chili. Place the fish in a glass dish and cover with the marinade. Refrigerate 1 hour.

    2. Remove the fish from the marinade and place on a rack set into a baking pan or a broiling pan. Sprinkle the fish with salt and pepper.

    3. Bake in a preheated 450-degree (F) oven 12 minutes per inch of thickness, or until the fish tests done. (The internal temperature should be 140 degrees on an instant-read thermometer.)

      Makes 4 servings.
