Misc: Oven-Fried Fish

- 1 lb. cod fillet, about 1-inch thick
- Nonstick cooking spray
- 3 cups wheat or plain white Melba toast
- 2 Tbsp olive oil
- 2 eggs
- 1 Tbsp Dijon mustard
- 1/2 tsp dried oregano, crushed
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/8 tsp cayenne pepper

Instructions
- Cut the fish into pieces about 2 inches wide. Put onto a paper towel-lined plate to drain 10 minutes. Heat oven to 450 degrees (F). Line a metal 9x13-inch baking pan with aluminum foil; set a large wire rack over the pan, or use 2 cake racks. Spray lightly with cooking spray.
- Put the Melba toast into a food processor and process to a fine crumb. Pour onto a plate. Drizzle the olive oil over the crumbs, stirring with a fork until evenly blended. In a shallow bowl or pie plate, whisk together the eggs, mustard, oregano, salt, black pepper and cayenne.
- Working with one piece of fish at a time, dip into the egg mixture, then roll in the crumbs until well coated. Place on the prepared pan and put onto center oven rack. Bake about 12 minutes, or until fish tests done.
Serve with lemon wedges.
Makes 4 servings.
