Orange Roughy: Orange Roughy with Dill Butter

- 3 Tbsp butter
- 4 (4- to 6-oz.) orange roughy fillets
- 1/2 tsp dried dill weed
- Dash salt
- Dash pepper
- 1-1/2 tsp butter
- 2 Tbsp unseasoned dry bread crumbs
Instructions
- Heat oven to 350 degrees (F). Melt 3 tablespoons butter in a 12x8-inch, 2-quart baking dish in the oven.
- Place orange roughy in dish; turn to coat with butter. Sprinkle with dill, salt, and pepper. Bake at 350 degrees for 15 to 20 minutes or until fish flakes easily with a fork.
- Meanwhile, melt 1-1/2 teaspoons butter in a small skillet or saucepan over medium heat. Add bread crumbs; cook until crumbs are light golden brown, stirring constantly. Sprinkle over fish during the last 3 minutes of baking time.
