Orange Roughy: Orange Roughy with Orange Sauce

List of Ingredients
- 1-1/2 lb orange roughy fillet
- 2 tsp virgin olive oil
- 1 tsp fresh lemon thyme (or any thyme), stemmed
- 1 red onion, chopped
- 1 organic orange, sectioned, peel thinly sliced
- 1 bunch fresh cilantro, stemmed
- 1/2 tsp salt
Instructions
- Rinse fish, pat dry and rub with 1 teaspoon oil. Pat thyme on both sides; set aside. Heat remaining oil in frying pan over medium-high heat. Add half of the onion and salt and cook, stirring, until onions are soft (3 to 4 minutes).
- Add fish, reduce heat to medium, and cover pan. Cook until fish flakes easily, 6 to 8 minutes. Toss remaining onion, orange sectons, peel, cilantro and salt, and serve over cooked fish.
