    Oysters: Oregon City Oregano Oysters

    List of Ingredients


    • 2 jars oysters, or 16 ounces shucked oysters
    • 3/4 tsp oregano
    • 1 tsp basil
    • 1/2 tsp salt
    • 1/4 tsp pepper
    • 1 large clove garlic, minced
    • 2 Tbsp chopped parsley
    • 1/3 cup crushed saltine crackers
    • 2 Tbsp fresh lemon juice


    Instructions


    1. Drain the oysters; cut in half if large, pat dry and distribute over the bottom of a lightly oiled oven dish.

    2. Mix together the oregano, basil, salt, pepper and garlic. Sprinkle over the top of the oysters. Combine the parsley and cracker crumbs. Distribute over the oysters.

    3. Dribble with lemon juice, then bake in a 400-degree (F) oven for 10 to 15 minutes. And pass the French bread, to sop up the oyster nectar.

      Serves 2 to 4
