Oysters: Baked Oysters with Parmesan

- 30 fresh oysters, in the shell
- 4 cups rock salt
- 1/3 cup freshly grated Parmesan cheese
- 1/3 cup dry bread crumbs
- 1 clove garlic, peeled and minced
- 1 Tbsp finely chopped parsley
- 2 Tbsp butter
- Freshly ground black pepper to taste
Instructions
- Shuck oysters and leave on half-shell. Divide rock salt between two 9x13-inch baking pans; arrange oysters in pans.
- Combine Parmesan, bread crumbs, garlic and parsley. Place about a teaspoon of the mixture on each oyster, dot with butter, and sprinkle with pepper.
- Bake in a preheated 475º F oven for 8 to 10 minutes, or until bubbly and cooked through. Serve immediately.
Makes 6 servings.
