    Oysters: Baked Oysters with Parmesan

    List of Ingredients


    • 30 fresh oysters, in the shell
    • 4 cups rock salt
    • 1/3 cup freshly grated Parmesan cheese
    • 1/3 cup dry bread crumbs
    • 1 clove garlic, peeled and minced
    • 1 Tbsp finely chopped parsley
    • 2 Tbsp butter
    • Freshly ground black pepper to taste


    Instructions


    1. Shuck oysters and leave on half-shell. Divide rock salt between two 9x13-inch baking pans; arrange oysters in pans.

    2. Combine Parmesan, bread crumbs, garlic and parsley. Place about a teaspoon of the mixture on each oyster, dot with butter, and sprinkle with pepper.

    3. Bake in a preheated 475º F oven for 8 to 10 minutes, or until bubbly and cooked through. Serve immediately.

      Makes 6 servings.
