Oysters: Easy Roasted Oysters

List of Ingredients
- One sheet of tin, cut 1 inch smaller than the size of the grill
- About 5 dozen oysters
- One double-thickness of burlap, large enough to cover oysters
- One spray bottle (to mist burlap)
- Kane Island Cocktail Sauce (recipe follows)
- Melted butter
- Hot sauce
- Saltine crackers
Instructions
- Place tin on grill over a hot fire.
- Arrange oysters in the shell on the sheet of tin, cover with burlap, mist burlap with water, and cook 7 to 9 minutes.
- Uncover oysters, and remove from grill with long-handled tongs. Open and serve with Kane Island Cocktail Sauce, melted butter, hot sauce, and Saltine crackers.

KANE ISLAND COCKTAIL SAUCE
• 2 cups catsup
• 3/4 cup chili sauce
• 1/2 cup prepared horseradish
• 1/4 cup red wine vinegar
• 2 Tbsp Worcestershire sauce
• 1 Tbsp fresh lemon juice
• 2 Tbsp minced onion
• 2 Tbsp minced celery
• 1 tsp freshly ground pepper
Combine all ingredients in a small bowl, stirring until blended; cover and chill.
Makes 4 cups.
