List of Ingredients
- Rock salt
- 1 dozen raw oysters on the half shell, drained; liquor reserved
- 8 slices bacon, cooked and crumbled
- 2 Tbsp minced garlic
- 2 Tbsp chopped onion
- ¾ cup shredded mozzarella cheese
Instructions
- Preheat the oven to 350° F. Fill the bottom of a baking dish with approximately 1 inch of rock salt. Place oysters in baking dish, using rock salt to steady shells.
- In the work bowl of a food processor, combine bacon, garlic, and onion. Process just until minced, approximately 30 seconds. If mixture seems too dry, add a little reserved oyster liquor. Top each oyster with 1 heaping tablespoon bacon mixture and 1 tablespoon cheese.
- Bake until cheese is melted, 10 to 12 minutes. Serve immediately.
Makes 4 appetizer servings.
