Oysters: Pan-Fried Oysters

- 12 large, fresh oysters
- 1½ cups flour
- Kosher salt and freshly ground black pepper
- Peanut oil

Instructions
- Open the oysters and remove them from the shells. Dry the oysters thoroughly with paper towels. Season the flour with salt and pepper, then dredge the oysters in the flour, gently shaking off any excess.
- Heat about ½ inch of the oil in a small, heavy skillet over medium-high heat until it shimmers. Fry the oysters in batches, until they are crisp, 1 to 2 minutes per side. Drain on paper towels, then sprinkle with salt, and serve with the lemon wedges.
