Prawns: Tequila and Lime Roasted Prawns

List of Ingredients
- 4 ounces tequila
- 2 ounces olive oil, divided
- 1 medium clove garlic, peeled and chopped
- 1 ounce lime juice
- 1 Tbsp jerk seasoning (Caribbean spices)
- Pinch red pepper flakes
- 1/8 tsp salt
- 18 prawns, peeled and deveined
- 1 lime, cut into 1/8-inch-thick wedges
- 1 Tbsp cilantro leaves
Instructions
- Combine the tequila, 1 ounce olive oil, garlic, lime juice, jerk seasoning, pepper flakes and salt. Pour over the prawns and marinate.
- Drain the prawns and reserve the marinade. Heat a large saute pan over medium-high heat.
- Add 1 ounce oil, and add prawns, stirring constantly, 1 to 2 minutes. Remove from the pan. Add the marinade and boil down until thickened. Add the prawns and stir 1 to 2 minutes.
Spoon onto a warm dish and garnish with lime wedges and cilantro leaves.
Makes 1 to 2 servings.
