Crab Cakes: Ray's Boathouse Crab Cakes

- 3 Tbsp diced red peppers
- 3 Tbsp diced shallots
- 1 Tbsp sherry
- 1 egg
- 1/4 cup cream
- 3 Tbsp lemon juice
- Dash Tabasco
- Pinch celery salt
- 1/2 tsp paprika
- Pinch ground white pepper
- Pinch salt
- 3 Tbsp chopped parsley
- 1 lb. Dungeness crab meat (break up larger pieces)
- 1/2 cup fine bread crumbs
Instructions
- Mix red peppers and shallots together. Mix together all other ingredients (except crab and bread crumbs) thoroughly in a separate bowl. Add peppers and shallots; mix by hand. Add crab and mix.
- Form crab mixture into patties. Pat on bread crumbs. Store between sheets of wax paper until ready to cook.
Pan-saute in melted butter until brown on both sides. Enjoy!
Serves 4
(Makes 16, 2-oz. patties.)
