Salmon: Rimrock Cafe Infused Salmon

- 1 part mascarpone *
- 4 parts chevre *
- Minced shallots
- Fresh tarragon
- 2 parts cooked crab, well-drained (squeeze out excess moisture)
- Salt and freshly ground white pepper

- Salmon fillet (with a pocket sliced in it)
Instructions
- Combine mascarpone and chevre. Add shallots and tarragon. Do not use a food processor. Mix in the crab, with seasonings to taste, and place into pocket of salmon.
- Cook in a 350-degree (F) oven for 15 to 25 minutes. (Time varies greatly with thickness of fish and personal preference.)
* Chevre is dry, and mascarpone is moist. If you don't like the moisture content of your mix, adjust cheeses accordingly.
