    Salmon: Rimrock Cafe Infused Salmon

    List of Ingredients


    • -- Crab & Chevre Stuffing --
    • 1 part mascarpone *
    • 4 parts chevre *
    • Minced shallots
    • Fresh tarragon
    • 2 parts cooked crab, well-drained (squeeze out excess moisture)
    • Salt and freshly ground white pepper
    • *
    • Salmon fillet (with a pocket sliced in it)


    Instructions


    1. Combine mascarpone and chevre. Add shallots and tarragon. Do not use a food processor. Mix in the crab, with seasonings to taste, and place into pocket of salmon.

    2. Cook in a 350-degree (F) oven for 15 to 25 minutes. (Time varies greatly with thickness of fish and personal preference.)

      * Chevre is dry, and mascarpone is moist. If you don't like the moisture content of your mix, adjust cheeses accordingly.
