    Salmon: Aluminum-Foil Salmon & Zucchini

    List of Ingredients


    • 1 Tbsp extra-virgin olive oil
    • 1 (2¼- to 2½-pound) salmon fillet
    • 3 zucchini, cut lengthwise into quarters, then thinly sliced
    • ½ cup dry white wine
    • 1 tsp kosher salt
    • ½ tsp freshly ground black pepper
    • 1 Tbsp butter, cut into pieces
    • 6 fresh thyme sprigs
    • ¼ cup chopped parsley


    Instructions


    1. Preheat the oven to 375° F.
      On a sheet pan, place 4 strips of aluminum foil with the shiny side down, two going one way and two going the other. Grease inside of the foil with the olive oil.

    2. Place salmon, skin side down, on the prepared pan, with the zucchini scattered around it. Pour the white wine on top, then sprinkle with the salt and pepper. Dot the salmon with the butter, then place the thyme sprigs on top. Sprinkle the whole pan with parsley.

    3. Seal the salmon tightly by folding the aluminum foil into a tent. Cook for 12 minutes. Bring to the table, carefully cut open the foil, and serve.

      Makes 8 servings.
