Salmon: Herb-Crusted Salmon with Dill Sauce

List of Ingredients
- 1/4 cup chopped fresh parsley
- 2 Tbsp chopped fresh rosemary
- 2 Tbsp chopped fresh tarragon
- 2 Tbsp chopped fresh oregano
- 2 (6-ounce) salmon fillets
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- Dill Sauce (recipe follows)
Instructions
- Combine first 4 ingredients in a shallow dish. Dredge fish in herb mixture (do not dredge skin side).
- Cook garlic in hot oil in a medium ovenproof skillet over medium heat 30 seconds. Add fish, coated side down, and cook 5 minutes or until browned on coated side.
- Turn salmon, skin-side down, in skillet and place, uncovered, in oven. Bake at 350° F for 7 minutes, or until fish flakes with a fork. Serve with Dill Sauce.
Makes 2 servings.

DILL SAUCE
• 1/2 cup mayonnaise
• 1/2 cup sour cream
• 2 Tbsp finely chopped onion
• 2 Tbsp honey mustard
• 1 Tbsp chopped fresh dill
• 1-1/2 tsp Worcestershire sauce
• 1/2 tsp chopped fresh tarragon
• 1/2 tsp chopped fresh basil
• 1/4 tsp minced garlic
• 1/8 tsp salt
• 1/8 tsp pepper
Combine all ingredients in top of a double boiler; bring water to a boil. Reduce heat to low; cook 10 minutes or until onion is tender.
Makes 1 cup.
