Salmon: Roasted Salmon with Horseradish Rosemary Aïoli

List of Ingredients
- 4 salmon fillets (6 ounces each), rinsed and patted dry
- 2 tsp extra-virgin olive oil
- 1/2 tsp coarsely ground black pepper
- 1/8 tsp salt
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/2 tsp minced garlic
- 2 to 3 tsp prepared horseradish
- 1/4 tsp dried rosemary, crushed
- 1 tsp Dijon mustard
Instructions
- Preheat oven to 400° F. Line baking sheet with heavy-duty foil; spray lightly with nonstick cooking spray. Set aside.
- Rub both sides of fillets with oil. Sprinkle evenly with pepper and salt. Press seasonings to adhere. Arrange fillets on prepared baking sheet. Bake 12 minutes or until opaque in center.
- Meanwhile, in small bowl, combine remaining ingredients. Top each fillet with equal amounts of sauce.
