    Sand Dabs: Pan-Fried Sand Dabs

    • 1/3 cup flour
    • 2 tsp butter
    • 2 tsp vegetable oil
    • 2 pounds sand dab fillets (or 4 pounds whole fish)
    • 1-1/2 tsp fine sea salt
    • 1-1/2 tsp freshly ground black pepper


    Instructions


    1. Put the flour on a plate or a sheet of aluminum foil.

    2. Put the butter and the vegetable oil in a large frying pan and heat over medium-high heat. When the butter has melted, gently dip the fillets, both sides, in the flour, and place in the frying pan. Cook in more than one batch if necessary, so that the pan does not get crowded.

    3. Sprinkle each fillet with a little of the salt and pepper and fry until golden, about 3 to 4 minutes, reducing the heat slightly if the oil and butter are too hot. Turn the fillets and cook the other side until just golden and the fish flakes easily with a fork, about another 3 to 4 minutes. Remove to a warm platter and continue until all the fillets are cooked. Serve immediately, accompanied by Homemade Tartar Sauce.

      HOMEMADE TARTAR SAUCE

      • 1 cup homemade or prepared mayonnaise
      • 3 tsp minced green or yellow onion
      • 1 Tbsp minced sweet pickle
      • 1 tsp Dijon-style mustard
      • 1 to 2 tsp sweet pickle juice
      • 1/2 tsp salt

      Combine the mayonnaise, onion, pickle, mustard, and 1 teaspoon of the pickle juice in a bowl and mix well. Taste and add salt and pickle juice as needed. Cover and refrigerate until ready to use. The tartar sauce can be made a day ahead.

      Makes about 1 cup.
