Halibut: Sauteed Halibut with Citrus Butter

List of Ingredients
- 1-1/2 lbs. fresh halibut fillets, about 1-inch thick
- Salt and pepper to taste
- Flour
- 1/2 cup clarified butter *
- 1/4 cup fresh lemon juice
- 1/4 cup fresh orange juice
- 2 Tbsp fresh lime juice
- 1 Tbsp minced parsley
Instructions
- Lightly season halibut fillets with salt and pepper to taste. Lightly coat with flour. In a large skillet, heat butter over medium heat until hot, watching carefully so it doesn't burn. Add fish to skillet and cook over high heat until tender, about 4 to 5 minutes per side.
- Place fish on a platter and keep warm in a low oven.
- Add juices and parsley to butter in skillet. Cook over medium heat, 2 to 3 minutes. Drizzle over halibut.
Makes 4 servings.
