Shrimp: Buttermilk-Battered Fried Shrimp

List of Ingredients
- 1½ cups crushed soda crackers
- ½ cup all-purpose flour
- Salt and freshly ground black pepper to taste
- ½ cup buttermilk
- 1 large egg
- Tabasco sauce to taste
- 2 pounds fresh large shrimp, shelled and deveined
- Vegetable oil for deep frying
Instructions
- In a shallow dish, combine the crackers, flour, and salt and pepper and mix till well blended. In a bowl, combine the buttermilk, egg, and Tabasco and beat till well blended.
- Dip the shrimp into the buttermilk mixture, dredge in the cracker mixture, and place on a platter.
- In a large, deep cast iron skillet, heat about 2 inches of oil to 365° F on a deep-fat thermometer, fry the shrimp in batches till golden, about 2 minutes, and drain on brown paper bags or paper towels. Serve hot.
