    Shrimp: Buttermilk-Battered Fried Shrimp

    From "Southern Fried" by James Villas

    List of Ingredients


    • 1½ cups crushed soda crackers
    • ½ cup all-purpose flour
    • Salt and freshly ground black pepper to taste
    • ½ cup buttermilk
    • 1 large egg
    • Tabasco sauce to taste
    • 2 pounds fresh large shrimp, shelled and deveined
    • Vegetable oil for deep frying


    Instructions


    1. In a shallow dish, combine the crackers, flour, and salt and pepper and mix till well blended. In a bowl, combine the buttermilk, egg, and Tabasco and beat till well blended.

    2. Dip the shrimp into the buttermilk mixture, dredge in the cracker mixture, and place on a platter.

    3. In a large, deep cast iron skillet, heat about 2 inches of oil to 365° F on a deep-fat thermometer, fry the shrimp in batches till golden, about 2 minutes, and drain on brown paper bags or paper towels. Serve hot.

      Makes 6 servings
