Shrimp: Garlic-Marinated Shrimp with Chimichurri Sauce

List of Ingredients
- 2 lbs. extra-large shrimp, peeled and deveined
- 4 cloves garlic, chopped
- 3 Tbsp extra-virgin olive oil
- 1/8 tsp dried crushed red pepper
- Chimichurri Sauce (recipe follows)
Instructions
- Combine shrimp and next 3 ingredients in a large bowl; cover and chill 1 hour.
- Arrange the marinated shrimp on a greased jelly-roll pan.
- Bake at 500º F for 5 to 6 minutes, or until pink. Serve with Chimichurri Sauce.
Makes 12 appetizer servings.

CHIMICHURRI SAUCE
• 1-1/2 cups packed fresh parsley leaves
• 1 cup packed fresh cilantro leaves
• 1/2 cup extra-virgin olive oil
• 3 Tbsp fresh oregano leaves
• 3 Tbsp lime juice
• 1 Tbsp red wine vinegar
• 2 garlic cloves
• 1 tsp salt
• 1 tsp ground cumin
• 1/4 tsp freshly ground pepper
Combine all ingredients in a blender or food processor; process until smooth.
Makes 1 cup.
