Shrimp: Greek Shrimp with Feta

List of Ingredients
- 4 tsp olive oil
- 1 medium clove garlic, peeled and minced
- 1 Tbsp peeled and minced shallot
- 1/4 tsp crushed red pepper flakes
- 1 tsp dried oregano, crushed
- 2 generous cups diced tomatoes (canned or fresh)
- 2 Tbsp dry white wine or water
- 1/4 to 1/2 tsp salt
- 1/3 cup frozen peas
- 2/3 lb. medium shrimp, peeled and deveined
- 1/2 cup crumbled feta cheese
Instructions
- In a small skillet, heat olive oil over medium heat. Put garlic and shallot into the pan and stir 30 seconds. Add pepper flakes, oregano, tomatoes, wine or water and salt. Simmer 5 minutes. Stir in peas and remove from heat.
- Spread shrimp over the bottom of a small baking dish. Top with sauce and crumbled feta cheese.
- Bake in a preheated 375-degree (F) oven 15 minutes, or until the shrimp are pink and cooked through. Serve with a roll or some good bread.
Makes 2 servings.
