Shrimp: Grilled Beer-Glazed Shrimp

- 1 cup lager
- ¼ cup packed dark brown sugar
- ¼ cup apricot preserves
- 3 Tbsp reduced-sodium soy sauce
- 1 tsp sriracha
- 2 pounds peeled and deveined jumbo shrimp (16 to 20 shrimp per pound)
- ½ tsp salt
- 1/8 tsp black pepper
Instructions
- Combine lager, sugar, apricot preserves, soy sauce and sriracha in medium bowl (make sure some preserve solids are included). Pour 1 cup lager mixture into small saucepan. Add shrimp to bowl with remaining lager mixture and refrigerate 30 minutes.
- Meanwhile, heat saucepan over medium-high heat and bring lager mixture to a boil. Reduce heat to medium and simmer until slightly syrupy, 10 to 11 minutes; reserve.
- Prepare grill for medium-high direct cooking.
Lightly oil grill grate. Remove shrimp from marinade, sprinkle with salt and pepper, and set on grill grate directly over heat source. Grill 2 minutes per side, or until shrimp are opaque and cooked through. Transfer to bowl and toss with reduced lager mixture to coat. Transfer to serving platter and serve hot or at room temperature.
Makes 6 to 8 servings.
