    Shrimp: Tequila-Lime Shrimp

    List of Ingredients


    • 2-1/2 pounds unpeeled large fresh shrimp
    • 1/2 cup olive oil
    • 1/4 cup fresh lime juice
    • 1/4 cup tequila
    • 2 shallots, chopped
    • 2 cloves garlic, minced
    • 1 tsp salt
    • 1 tsp ground cumin
    • 1/2 tsp pepper


    Instructions


    1. Peel shrimp, leaving tails intact; devein, if desired. Combine oil and remaining 7 ingredients in a bowl; stir in shrimp. Cover; chill 1 hour.

    2. Remove shrimp from marinade, discarding marinade. Thread 9 shrimp on each of 6 (12-inch) metal skewers.

    3. Coat food rack with cooking spray; place on grill over medium-high heat (350° to 400° F). Place skewers on rack; grill, without grill lid, 3 to 4 minutes on each side or until shrimp turn pink.

      Makes 6 servings.
