Shrimp: Shrimp in Feta-Tomato Sauce

- Salt
- 1 (16-oz.) box orzo pasta
- 1 Tbsp olive oil
- 1 bunch green onions, cut into 1-inch pieces
- 1 large clove garlic, minced
- 1/4 tsp dried oregano
- 1/8 tsp crushed red pepper
- 1 (28-oz.) can plum tomatoes, in juice
- 1 lb. medium shrimp, shelled & deveined
- 4 oz. feta cheese, crumbled (1 cup)
Instructions
- Heat a large saucepot of salted water to boiling over high heat. Add orzo and cook as package directs.
- Meanwhile, in a 12-inch skillet, heat oil over medium heat until hot. Add green onions and garlic and cook 1 minute or until fragrant, stirring. Stir in oregano and red pepper.
- Add tomatoes with their juice, breaking up tomatoes with side of spoon. Cook, uncovered, 2 to 3 minutes or until liquid thickens slightly.
- Stir in shrimp; cover and cook 3 to 5 minutes or until shrimp turn opaque throughout, stirring once. Stir feta into skillet; add salt to taste.
To serve, drain orzo; spoon into 4 shallow bowls. Top with shrimp and sauce.
Makes 4 main-dish servings.
