    Snapper: Mediterranean Roasted Snapper

    List of Ingredients


    • Four 6-ounce snapper fillets
    • 1 Tbsp extra-virgin olive oil
    • 1/2 tsp salt
    • 1 Tbsp chopped fresh thyme
    • 1 Tbsp chopped fresh oregano
    • 1 tsp grated lemon rind
    • 1 Tbsp fresh lemon juice


    Instructions


    1. Place fish in the bottom of a lightly greased broiler pan. Brush tops with oil; sprinkle evenly with salt, thyme and oregano. Sprinkle rind and juice over fish.

    2. Bake at 425 degrees (F) for 12 minutes or until done.

      Makes 4 servings.
