    Squid: Vietnamese Grilled Squid

    List of Ingredients


    • 1 lb. cleaned squid
    • 1 Tbsp salt
    • 1/2 cup cilantro leaves
    • .
    • -- Marinade --
    • Pinch of pepper
    • 2 cloves garlic, crushed
    • 2 Tbsp peanut oil
    • 1 tsp five-spice powder
    • 1 tsp curry powder
    • 1 Tbsp finely chopped lemongrass
    • 1 Tbsp thick soy sauce
    • 1 tsp sesame oil
    • 1 Tbsp lime juice
    • 1 tsp sugar
    • .
    • Fish Sauce Dip (recipe follows)


    Instructions


    1. Rub the squid with salt and rinse. Slit and flatten the squid sac and make diagonal cuts on the inside surface. Cut into bite-sized pieces.

    2. Combine marinade ingredients, then marinate squid for 1 hour.

    3. Grill squid over a charcoal grill, until just tender (about 2 minutes each side). Arrange on a serving platter and garnish with cilantro. Serve with Fish Sauce Dip.

      FISH SAUCE DIP:

      1/4 cup water or fresh coconut juice
      1 tsp rice vinegar
      1 tsp sugar
      1 red chili, seeded, finely chopped
      2 cloves garlic, crushed
      1 Tbsp lime juice
      2 Tbsp fish sauce

      Boil water or coconut juice with vinegar and sugar; allow to cool. Combine chili, garlic and lime juice, and add to the coconut mixture. Stir in the fish sauce.
