Squid: Vietnamese Grilled Squid

List of Ingredients
- 1 lb. cleaned squid
- 1 Tbsp salt
- 1/2 cup cilantro leaves

- Pinch of pepper
- 2 cloves garlic, crushed
- 2 Tbsp peanut oil
- 1 tsp five-spice powder
- 1 tsp curry powder
- 1 Tbsp finely chopped lemongrass
- 1 Tbsp thick soy sauce
- 1 tsp sesame oil
- 1 Tbsp lime juice
- 1 tsp sugar

- Fish Sauce Dip (recipe follows)
Instructions
- Rub the squid with salt and rinse. Slit and flatten the squid sac and make diagonal cuts on the inside surface. Cut into bite-sized pieces.
- Combine marinade ingredients, then marinate squid for 1 hour.
- Grill squid over a charcoal grill, until just tender (about 2 minutes each side). Arrange on a serving platter and garnish with cilantro. Serve with Fish Sauce Dip.
FISH SAUCE DIP:
1/4 cup water or fresh coconut juice
1 tsp rice vinegar
1 tsp sugar
1 red chili, seeded, finely chopped
2 cloves garlic, crushed
1 Tbsp lime juice
2 Tbsp fish sauce
Boil water or coconut juice with vinegar and sugar; allow to cool. Combine chili, garlic and lime juice, and add to the coconut mixture. Stir in the fish sauce.
