- 6 to 8 jumbo shrimp per person
- Salt
- Flour
- Beaten egg
- Fine cracker meal or bread crumbs
- Fat
Instructions
- Peel large, fresh, uncooked shrimp, leaving the tail on. Remove the dark line down the back and split down the back without separating. Wash, press flat, season with salt and roll in flour.
- Dip the shrimp first in beaten egg and then in fine cracker meal or bread crumbs.
- Fry until a rich brown in deep smoking fat. Serve with tartar sauce and garnish with lemon segments and parsley.
