Mahi Mahi: Tempura Mahi Mahi

- 1 egg
- 2 cups water
- 2 cups flour
- 1 tsp baking powder
- 1 tsp salt

- Oil or shortening for frying
- 2 lbs. mahi mahi, cut into 4-ounce portions
- Salt and pepper
- Soy sauce
Instructions
- Make the batter: In a small bowl, whisk together egg and water. In a separate bowl, combine flour, baking powder, and salt. When ready to cook, add flour mixture all at once to egg mixture and stir until well combined.
- In a deep kettle, heat oil or shortening to 360 degrees, or until a cube of bread dropped in will float immediately to the top and begin to brown.
- Dip salt-and-peppered mahi mahi fillets into the tempura batter and fry, two at a time, for 6 to 7 minutes or until well browned. Drain on brown paper and hold in a warm oven.
Serve with soy sauce.
