    Mahi Mahi: Tempura Mahi Mahi

    List of Ingredients


    • -- Tempura Batter --
    • 1 egg
    • 2 cups water
    • 2 cups flour
    • 1 tsp baking powder
    • 1 tsp salt
    • *
    • Oil or shortening for frying
    • 2 lbs. mahi mahi, cut into 4-ounce portions
    • Salt and pepper
    • Soy sauce


    Instructions


    1. Make the batter: In a small bowl, whisk together egg and water. In a separate bowl, combine flour, baking powder, and salt. When ready to cook, add flour mixture all at once to egg mixture and stir until well combined.

    2. In a deep kettle, heat oil or shortening to 360 degrees, or until a cube of bread dropped in will float immediately to the top and begin to brown.

    3. Dip salt-and-peppered mahi mahi fillets into the tempura batter and fry, two at a time, for 6 to 7 minutes or until well browned. Drain on brown paper and hold in a warm oven.

      Serve with soy sauce.

      Serves 4
