Tuna: Sunday Supper Tuna Croquettes

List of Ingredients
- Two 5-ounce cans solid white tuna, drained
- 1 small onion, finely chopped
- 1 small green bell pepper, seeded and finely chopped
- 2 large eggs, beaten
- 3 tablespoons all-purpose flour
- 1 tablespoon Worcestershire sauce
- Salt and freshly ground black pepper to taste
- Cayenne pepper to taste
- ¼ cup vegetable oil
Instructions
- In a bowl, combine the tuna, onion, bell pepper, eggs, flour, Worcestershire, salt and pepper, and cayenne and mix till well blended and smooth. Form the mixture into 4 croquettes and place on a plate.
- In a large, heavy skillet, heat the oil over moderately high heat, add the croquettes, and fry till golden brown, about 3 minutes on each side, turning once.
- Drain on paper towels and serve hot.
Makes 4 servings
