Halibut: West Coast Halibut Cheeks

List of Ingredients
- 2-1/2 lbs. fresh halibut cheeks
- 1/3 cup unbleached all-purpose flour
- 2 Tbsp olive oil
- 2 Tbsp unsalted butter
- 3 shallots, finely minced
- 3 Tbsp chopped flat leaf parsley
- 1 Tbsp capers
- 2 tsp chopped fresh thyme
- 2/3 cup white wine
- Salt to taste
- Freshly ground pepper to taste
Instructions
- Dredge the halibut cheeks in flour. Heat the oil and butter together in a fry pan.
- Add the halibut cheeks to the pan and cook until golden brown, about 2 to 3 minutes on each side. Add the shallots, parsley, capers and thyme. Continue to cook for 4 more minutes.
- Add the wine to the pan, along with the salt and pepper, and cook until the cheeks are cooked through. Depending on their size, this may be another minute or so.
Serve with steamed baby potatoes or your favorite vegetable. Ladle the pan juices over the top.
