    Cheese Manicotti

    List of Ingredients


    • 1 (8-ounce) package manicotti
    • 1½ cups ricotta cheese
    • 2 cups cottage cheese
    • 4 ounces cream cheese
    • ½ cup freshly grated Parmesan cheese
    • 1½ cups shredded mozzarella cheese
    • 1 Tbsp dried parsley flakes
    • 1 tsp salt
    • ¼ tsp pepper
    • 3 to 4 cups spaghetti sauce


    Instructions


    1. Do not cook manicotti.
      Combine all ingredients except manicotti and spaghetti sauce. Grease foil baking pan(s). Cover bottom of pan with some spaghetti sauce.

    2. Place cheese mixture in a plastic zip-style bag and zip closed. Cut a small hole in one corner of the bag and squeeze filling into each manicotti shell. Arrange manicotti on spaghetti sauce in pan. Pour remaining spaghetti sauce on top. Cover with heavy freezer foil. Label and freeze.

      TO SERVE:
      Thaw. Bake, covered, for 45 minutes at 350° F. Uncover; top with more mozzarella cheese and bake an additional 10 minutes or until cheese melts.

      Makes 8 servings
      (or two batches of 4 servings)
