Recipe Introduction
"When I start with a hearty breakfast, I stave off hunger all day. One way to do that is to zap one of these frozen burritos in the microwave. This recipe is my family's favorite combo, but I sometimes choose breakfast sausage instead of bacon."
List of Ingredients
â—¦ 12 bacon strips, diced
â—¦ 12 large eggs, lightly beaten
â—¦ Salt and pepper to taste
â—¦ 10 flour tortillas (8 inches)
â—¦ 1 ½ cups (6 ounces) shredded cheddar cheese
â—¦ ½ cup thinly sliced green onions
Recipe
In a large skillet, cook bacon until crisp; remove to paper towels. Drain, reserving 1 to 2 tablespoons drippings. Add eggs, salt and pepper to drippings; cook and stir over medium heat until the eggs are completely set.
Spoon about ¼ cup of egg mixture down the center of each tortilla; sprinkle with cheese, onions and reserved bacon. Fold bottom and sides of each tortilla over filling. Wrap each in waxed paper and aluminum foil. Freeze for up to 1 month.
