    Sweet and Sour Chicken

    List of Ingredients


    • 4 boneless, skinless chicken breast halves
    • 1 Tbsp oil
    • 1 carrot, sliced
    • 1 clove garlic, minced
    • 1 cup sugar
    • 4 Tbsp cornstarch
    • 1-1/3 cups water
    • 3 Tbsp oil
    • 2/3 cup vinegar
    • 4 Tbsp soy sauce
    • 1 onion, chunked
    • ½ red bell pepper, chunked
    • ½ green bell pepper, chunked
    • 1 small can pineapple chunks


    Instructions


    1. Cut chicken into 1-inch cubes. Sauté in 1 tablespoon oil with carrot and garlic until no longer pink. Remove from heat and allow to cool.

    2. Combine sugar and cornstarch in saucepan. Stir in water. Add 3 tablespoons oil, vinegar and soy sauce. Cook and stir until thick and clear. Remove from heat.

    3. Stir together chicken, sauce, vegetables and pineapple. Allow to cool. Place in gallon freezer bag. Label and freeze.

      Makes 8 servings
      (or 2 batches of 4 servings)

      TO SERVE:
      Thaw. Heat until hot and bubbly. Serve with hot rice.
